Homemade Blackberry Jam Recipe
Ingredients:

4 cups fresh blackberries (or thawed if using frozen)
2 cups granulated sugar
2 tablespoons lemon juice
1 teaspoon lemon zest (optional, for added citrus flavor)
1 packet (1.75 ounces) fruit pectin (optional, for quicker setting)
Instructions:

Prepare the Berries:

Rinse the blackberries and remove any stems or leaves.
Mash the blackberries using a potato masher or blend them in a food processor to your desired consistency. For a chunkier jam, mash less; for a smoother jam, mash more.
Cook the Jam:

In a large, heavy-bottomed pot, combine the mashed blackberries, sugar, lemon juice, and lemon zest.
If using fruit pectin, add it to the mixture according to the packet instructions.
Stir the mixture over medium-high heat until the sugar is completely dissolved.
Bring the mixture to a boil, stirring frequently to prevent sticking and burning.
Once boiling, reduce the heat to medium and let it simmer for about 20-30 minutes, stirring occasionally. If you’re using fruit pectin, follow the recommended boiling time on the packet.
Test for Doneness:

To check if the jam has set, place a small plate in the freezer for a few minutes.
Spoon a small amount of jam onto the chilled plate and return it to the freezer for a minute.
Run your finger through the jam on the plate. If it wrinkles and holds its shape, the jam is ready. If not, continue to simmer for a few more minutes and test again.
Can the Jam:

Sterilize your jars and lids by boiling them in water for 10 minutes.
Carefully ladle the hot jam into the sterilized jars, leaving about 1/4 inch of headspace at the top.
Wipe the rims of the jars with a clean, damp cloth and place the lids on top.
Screw the bands on until fingertip-tight.
Process the Jars:

Place the filled jars into a boiling water bath canner, ensuring they are fully submerged.
Process for 10 minutes (adjust for altitude if necessary).
Remove the jars and let them cool undisturbed for 24 hours. Check that the lids have sealed by pressing the center; it should not flex up and down.
Store and Enjoy:

Store the sealed jars in a cool, dark place. Once opened, keep the jam in the refrigerator.
