Salsa recipe: 
makes 4 pints 
2 quarts (64oz) peeled, whole tomatoes 
3 Serrano peppers or 2 jalapeños - adjust to your preferred level of spice 
1 poblano pepper 
1/2 cup chopped onion 
4 garlic cloves
1 cup chopped cilantro - leaves & stems 
Juice of 2 limes 
1 tsp salt 
1/2 tsp pepper 
1/2 tsp cayenne powder 
1 tsp chili powder 
1 tsp cumin 

Blend everything & serve fresh or water bath can

Try roasting tomatoes jalapeño white onion garlic peppers  on cookie sheet i do 350 30 mins  then broil 15-20 mins.  Add tablespoon salt.   Tablespoon Cumin.   1/4 cup lime. Then blend

I like the taste of the little charred bits on the tomato skin. Often times I char the onions and peppers as well. Do you think it would be safe to leave some of the charred bits in the salsa while canning?
