The hammam furnace man was straight out of a fantasy RPG. Him feeding the flames and then playing his instrument were such a magical sight to see.

Morocco, my homeland, truly feels like magic. I’ve been living in Texas for 13 years and spent another 5 years in France, but every year, no matter what, I have to go back for at least three weeks. I’ll spend my savings without hesitation—even if it leaves me broke—just to return to where my roots are, where food, family, and friends come together. And the snails—my mom can’t stand them, but I’ve loved them since I was a kid. We used to head out into the wild, gather them ourselves, and cook them plain, no spices at all. Over the years, they’ve become more refined—well-prepared, beautifully served, still affordable—but just as delicious. I seriously can’t wait to head back in August!
