I have made pancake mix for over 40 years. When I make it up I do it in batches of about 26 cups at a time in a huge metal bowl I have. I usually make up 2 batches, so I am making 52 cups of mix. I store it in a 5 gallon bucket and just refill a 12 cup rubbermaid cereal container for everyday use. When the bucket is getting low I know I have to make the mix up again. You may think that 52 cups is a lot but we have pancakes or waffles at least once a week, so that 52 cups is about 3 months worth. I also make my own Bisquick and several other mixes. When I was a new mom I bought 2 books called "Make-A-Mix Cookery" and "More Make-A-Mix Cookery" (both by Karine Eliason), and that is where I got the recipes from. We raised 6 kids on just one income so money was always tight. Making my own mixes helped keep costs down. Even though we are a much smaller family now that my kids are grown, (2 youngest are special needs and still live at home) I still make the mixes. It is part of my prepper pantry.

Try adding Nutmeg to Pancake and Belgium Waffle Mixes...boosts the flavor. And instant coffee to the Brownie Mix. Increases the Cocoa flavor.

Iโ€™m new here. Love the recipes. I donโ€™t know about anyone else, But, I hate accidentally bumping my glass jars when taking out or putting back on shelves. So I take old socks that Iโ€™m throwing away ( Clean) and cut the tops off them. Slip them over the jars and no more accidentally hitting jar against jar.. Hope this helps others..

Tan, Yellow, Lime Green, Orange or Blue Painter's  Masking Tape works great for Labeling as well. Cheap easy to use Sharpie marker and comes off without a sticky mess.

This is very helpful. Just so you know, you don't have to continually measure out tablespoons and teaspoons. 3 tsp = 1 TBSP,  4 TBSP = 1/4 CUP, 8 TBSP = 1/2 CUP. Saves time.

I appreciate the fact that you are properly measuring, leveling off with a knife, etc.  I teach Family & Consumer Sciences classes (Formerly called Home Ec.)  at the local High School. Most people don't properly level off ingredients.  It is so hard to teach students proper measuring techniques when they don't see proper examples in the videos that they watch.  Thank you so much.

I m new here , i m from Belgium , the waffle mix are not really Belgium , we do not baking powder inside , we make themm with yeast , the waffle mix you make are for German Waffe ๐Ÿ˜Šbut your other mixes are very helpfull, thanks so much โฃ๏ธ๐Ÿ‘

Drinking chocolate....... it's a gamechanger..... it's just powdered milk, white sugar and cocoa powder ...... i use 2 cups each of the milk powder and sugar and 1 and a half cups of cocoa as a base to fit in a 2 pint jar...... make up, in a mug, with boiling water and add a drop of cream or whole milk  and/or a bit more sugar to taste. (Whatever you put in the jar, someone in the house likes it slightly different!)

Tip:  place a folded towel on the counter and with the lid off tap the bottom of your gallon jar on the towel to get the air out. It will settle and give you more room in the jar. Works great. Sometimes the mix will drop several inches.

When making my dry mixes I NEVER thought to use my Kitchen Aid mixer and mix up the dry ingredients in it . I always used a wooden spoon or a whisk by hand , so my hands thank you as the mixer saves me that struggle,So thank you for sharing your fantastic tip to mix it up in the Kitchen Aid stand mixer plus it will mix it so well that all the ingredients will be well incorporated. I also like that  youโ€™re making up LARGE mixes because it lessens having to make the mix up again so soon especially if our family isnโ€™t as large as yours is . Blessing

I love that you properly measure your ingredients! It's useless to  watch ppl that always guess or measure with their heart if you want a good result.

Grandma used  1 gallon pickle jars and Mainaise  jars. She kept everything in canning jars. So I started doing that to. Works wonders.

When i jar stuff and want to put directions I put scotch tape on the jar and write on that, then when I'm done I put another layer of scotch tape over it. Keeps it from getting rubbed off and when it's time to remove, the thick tape is actually pretty easy to scrape off.
