The reason trampling crops and farmland makes you go insane is because you are undoing progress that could potentially lead to your salvation. Imagine you don't want to kill anything*, you don't want their blood on your hands, you are starving, and you undo the crop that *almost allowed you to eat today. Pretty soul crushing

Btw, 'sanity' just refers to general psychological state. It collapses two dimensions (sanity and emotional state) into one, so that's why you lose 'sanity' when you do things that make your character sad.
